GAZPACHO


Due to the steamy and hot weather of Florida I have been wanting to eat fresh, mediterranean and cold food. I asked Marialuisa a friend blogger from Spain with her blog decocinasytacones for the gazpacho recipe.


The gazpacho is a cold soup originally from the south of Spain, Andalusia. Made with raw vegetables. Is refreshing, perfect to have it during hot summer days.


You can have it with guarnición (garnish)

Ingredients
2 lb of ripe tomatoes, peeled seeded and chopped
cucumber peeled, seeded and chopped
1 thick slice of country bread soaked in water
1 spring onion
1 garlic clove peeled and chopped
2 tbsp sherry vinegar 
1/2 cup extra Virgin olive oil
salt

Garnishes ( small amounts)
onion, finely diced
cucumber, peeled and finely diced
green pepper, seeded and finely diced
tomato, seeded and finely diced
croutons

In a food processor or blender puree all the ingredients, press mixture through a sieve and chill before serving.

A perfect summer dish !

I adore gazpacho, but I like mine to be a little chunky so I can bite into the beautiful vegetables. I've never thought about having them as garnishes. It's gorgeous. Thank you for sharing your friend's wonderful recipe.
