Due to the steamy and hot weather of Florida I have been wanting to eat fresh, mediterranean and cold food. I asked Marialuisa a friend blogger from Spain with her blog decocinasytacones for the gazpacho recipe.
The gazpacho is a cold soup originally from the south of Spain, Andalusia. Made with raw vegetables. Is refreshing, perfect to have it during hot summer days.
You can have it with guarnición (garnish)
Ingredients
2 lb of ripe tomatoes, peeled seeded and chopped
1 cucumber peeled, seeded and chopped
1 thick slice of country bread soaked in water
1 spring onion
1 garlic clove peeled and chopped
2 tbsp sherry vinegar
1/2 cup extra Virgin olive oil
salt
Garnishes ( small amounts)
onion, finely diced
cucumber, peeled and finely diced
green pepper, seeded and finely diced
tomato, seeded and finely diced
croutons
In a food processor or blender puree all the ingredients, press mixture through a sieve and chill before serving.
A perfect summer dish !

Lovely gazpacho! It does look perfect for this hot Florida heat we have been having!
I adore gazpacho, but I like mine to be a little chunky so I can bite into the beautiful vegetables. I've never thought about having them as garnishes. It's gorgeous. Thank you for sharing your friend's wonderful recipe.
Oh, this is one of my favorite soups...of both hot and cold varieties! Yours sounds fabulous...and would have been an excellent dinner on this hot, humid day~
I love Gazpacho and yours is stunning! Not just the recipe, but the pictures....
Thanks for sharing! As a fellow Floridian, I understand the heat, but I do love summer!
I’ve always wanted to make my own, but never got to it. Love your pictures! I’ve seen them being served with mini mozzarella balls as well.

Our hot weather seems to have flown the coop but our produce is still abundant and this gazpacho sounds completely fantastic!
The smooth, cold soup with all the garnishes looks fantastic. And, our weather is still hot enough here to need a refreshing dish like this!
I can smell it, taste it, and it just looks so pretty. Nice one Lola.
